How We Raise Our Beef

Just like Thomas Kennedy over 100 years ago, our mother cows have their calves starting in October on our winter pastures in Sonora, California. During this time, they graze on native foothill grasses, never in close confinement. In late spring the cows are shipped back to mountains and unloaded close to Kennedy Meadows Resort and Pack Station.

We then drive them horseback 8 miles into the Emigrant Wilderness to Kennedy Lake. There, the cows and calves spend their summers growing and grazing on high mountain pastures. In the fall, cowboys gather the cattle and drive them off the mountain back to Kennedy Meadows Resort, where they are shipped back to their winter pastures in Sonora.

The calves are weaned off their mothers and either sold or kept as replacement cows for the herd. We select prime animals to be processed for direct sales to our customers. Those chosen to be processed are shipped to a USDA facility in Modesto, CA.

They are then processed and packaged at a family-owned meat processing facility, Sander’s Meat, in Turlock, CA. The meat is then picked up and stored in an approved freezer until it is shipped or sold directly to the consumer, or used in our restaurant at Kennedy Meadows Resort.
